不知有多少人和我一樣,還記得一部八零年代後期的電影 "When Harry Met Sally". 故事圍繞著兩位主角對於男女關係反覆地探討和爭論,高維修女友和過渡人士真可以成為男女朋友甚而結合嗎? Well,我只是喜歡它的名字,以及八零年代時的 Meg Ryan. 演技好,自信,又有氣質。只可惜現在的她經过幾次整容,已經慘不忍睹了。
好了,言归正傳,其實抹茶紅豆還蛮配的。運用在戚風蛋糕上,更添加了純東方的色彩。我喜歡全部原料都是手工製做,不用任何現成的罐头或半成品,所以,要多費点時間嘍!
食材:
紅豆 一杯, 奶油 2 Tbsp ,細砂糖 2 Tbsp
全蛋 4個
牛奶 2 Tbsp + 2 tsp
油 (建議用橄欖油或葡萄籽油) 3 Tbsp
細砂糖 (蛋黃用) 1 Tbsp+1 tsp
細砂糖 (蛋白用) 1/4 杯 + 1Tbsp
低筋麵粉 2/3 杯
泡打粉 1/4 tsp
抹茶粉 1 Tbsp
鮮奶油 1/2 杯,細砂糖 1/4 杯
Ingredients
Red bean (raw) 1 cup, 2 Tbsp butter, 2 Tbsp sugar
Egg 4
Milk 2Tbsp + 2 tsp
Oil (Olive oil or Grape seed oil) 3Tbsp
Sugar (for egg yolk) 1Tbsp + 1tsp
Sugar (for egg white) 1/4 cup + 1Tbsp
Cake flour 2/3 cup
Baking Powder 1/4 tsp
Green tea powder 1 Tbsp
Whip cream 1/2 cup, sugar 1/4 cup
做法:
一杯紅豆浸泡四小時以上,然后用電鍋以煮飯的方式煮熟,電鍋跳起來後加一米杯的水,再煮,再跳起後不要開鍋,闷一小時。悶好後打開電鍋,趁熱拌入糖和奶油,放涼備用。
One cup red bean in sip in water for over 4 hours, cook it in the rice cook as if you cook steam rice. Add another cup of water when the rice is ready, then cook again. Do not open the rice cooker when it's ready the second time. Afer 1 hour, open the rice cooker, mix in butter and sugar. Let is aside.
蛋黃、蛋白分兩盆,將泡打粉、低筋麵粉混合過篩備用。蛋黃加入砂糖攪拌至沒砂糖的顆粒,加入油拌勻,加入奶拌勻,加入混合過篩的麵粉然後加入抹茶粉,拌勻備用。分次將打好的蛋白加入電黃糊中,慢慢攪拌均勻。
Separate the egges into egg yolk and egg white. For egg yolk, mix in sugar, oil and milk slowly, then fold in the green tea powder. For egg white, use electronic mixer in high speed, beat till it comes hard to push. Fold in the egg white mixture into the egg yolk mixture.
將麵糊摊平在舖好紙的烤盤上,華氏350度烤十分鐘。在烤的時間可以打鮮奶油,將半杯鮮奶油用高速打发,打好後塗在烤好的蛋糕上,再鋪上紅豆,捲起。捲的時候儘量用力平均,捲好的成品才會漂亮。
Pour the mixture into the baking pan lined with baking paper, 350 degree F for 10 minutes. While baking, use electric mixture to beat 1/2 cup whip cream with 1/4 cup sugar. When the sheet cake is ready, spread the whip cream then red bean then carefully wrap up via baking paper.
